Back from Vacation!

We've been on vacation! We went up north for a holiday, and I'm just now catching up on my blogging. Before I did that, though, I spent quite a bit of time in the kitchen.

Pictured here is a batch of my favorite Chocolate Zucchini Bread. I froze one loaf, gave away another, and we've been enjoying the third loaf this week.

Karen, your chocolate zucchini bread looks wonderful.

I wanted to email you back the answer to your question on my blog. But, I think the email was incorrect. As it was returned. I also looked for an email on your site but couldn't find one. So, I thought I would respond here. Hope you don't mind. I guess you can delete it after lol

Karen,

thanks for the comment. I like to roast my butternut squash cut side up. I think it looks much nicer when serving them to guests. I too like a little brown sugar and butter. But, the olive oil adds a nice flavor with the crushed fennel seeds on top. I hope you will give it a try.

If I'm using the small butternut squash I will serve them in the peel. The large ones I'll spoon it out in a bowl.

Take care Karen!

Thank you so much, Chuck! I'm sorry that I must have mistyped my email when I asked the question on your blog. You are so thoughtful to visit my blog to answer my question! What a blessing! I'm going to put butternut squash on my shopping list this week so that we can give your recipe a try. Thank you again, and I really enjoyed your blog. I'll be back again soon. :-)
